I'm wondering if there are any "classical", or for that matter newer piano music that uses both major and minor scales of the same key in the same piece?

Many sonatas (Beethoven, Mozart, Haydn, etc.) often repeat a theme in both the major and minor modes of the same key. The appearances are not necessarily juxtaposed.

Charles Ives' Variations on "America" plays the theme in both major and minor. Many variations do this.
