I went to a seminar my guitar teacher held today and this awesome guitar player came and showed us cool sweeping things and awesome legato string sting stuff. I can play this legato passage at 80 bpms, not that great I know, but almost every string rings out when I play it, how can I stop this?

With a variety of muting techniques and a lot of practice.

Which hand should probably do most of the muting?

Both hands, but in that particular lick I would say your left hand needs to release the pressure from the string quickly on each note. Your right hand palm or middle, ring and pinky fingers should be muting unplayed strings. Or at least strings WHEN they are unplayed.

That's a Paul Gilbert lick if I'm not mistaken...

The low note should be muted by the finger fretting the note (ring finger in my case). Just release pressure slightly so it stops ringing. After that it's basically your picking hand palm and good left hand legato technique.

It requires great accuracy with your fretting hand too. All the muting in the world won't help unless it's precise.

Which article helps with that string skipping/legato/tapping stuff? This would be a lot easier without the tapped high c at the top, but it makes it sound better.

Keep your right hand above the fretboard, in the position where you tap the note later. Pick there. You can also use that hand to mute the strings a bit.
