i have a question regarding these, i usually use the barring technique of my index finger to cover two notes. but when i play iron maiden i seem to fumble a bit. am i doing them wrong?, or should i just practice more.

You can bar them with a single finger, or use two fingers, like ring and pinky. It really depends on the situation. Try whatever seems practical and see what works better.

FYI: double stops can be any two notes, not just the ones played with a single finger on two adjacent strings.
