For learning odd times, I recommend Even In the Odds by Ralph Humphrey. It's a drum book, but the exercises can be applied to other instruments. To my knowledge, there aren't any books like that for guitarists. Odd time playing is usually a drummer's interest.

I think a good excercise to do with odd time sig's is to get a piece of staff paper and write out as many different rhythemic passages as you can. Just mess around with the different note values and practice playing them with a metronome. My metronome is cheap so on a 7/4 song I have to set it to like 200bpm so it's a moderate speed 1 2 3 4 5 6 7.

Once you write a few measures of the time sig. with different note phrasings play them on the guitar. Try to get a feel for the time's..there is a certain groove to each one. On 7/4 again ( i like this one ) i usually have my foot count half note, half note, dotted half note. On 5/4 just steady one, two, three, four, five. Great song to practice that with is David Brubeck's Take Five, and Dream Theater's Beyond This Life.
