I just downloaded some tab for Intervallic Arpeggios from Jason Becker's web site. They sound really cool!! Why are they called Intervallic Arpeggios? What characteristic makes them Intervallic Arpeggios?

They're based on normal arpeggios, but rather than being built all from 3rds, they jump around by different intervals.
The first example is a Cmaj9 arpeggio, but rather than being played in thirds as C, E, G, B, D, the notes are reordered to get different intervals in there, namely perfect 5ths: C G D E B.
Most chord voicings on guitar are not built from thirds, but rather are spread out a little more and have some wider intervals in them. Think of this as arpeggiating those voicings rather than playing a stricly third based arpeggio.

All arpeggios are intervallic runs, since they're made of inthervals planted against a root...of course, there is something called open-voiced chords...it's when you displace the notes in the chord...for example C E G...instead of playing that, you could go and play G E C...so there you have an open-voiced triad (as explained by Jon Finn in his article: "Sweep-picking for the non-shredder)
