    Chord progression doubt

Ok i have a Santana-style progression which goes like this Am to D7 to Gmaj7 to Cmaj 7 to F#dim to B7

I have recently started to dive in jazz music as I come from the simple and easy world of rock and roll and I was hoping someone could help me understand WHY IS THERE 2 DOMINANT CHORDS and the reason they are there

    Thanks in advantage

I'm no analysis expert but here's what I think is happening.

    Am to D7 to Gmaj7 = ii-V7-Imaj7 in G Major

Cmaj7 is a pivot chord used to change keys from G Major to it's relative minor key, E Minor.
Cmaj7 is both the IVmaj7 chord in G Major and the bVImaj7 chord in E Minor.

Then F#dim to B7 is a ii*-V7 in E minor, but it must be used here to lead back to the Am chord by landing on one of it's notes(A,C,E). I'm guessing E.
And the B7 is implying B Phrygian Dominant(aka E Harmonic Minor). Landing on the E note puts you back inside the Am chord. Etc.
